I'll definitely make this again & again! * Exported from MasterCook * Portabello Chipotle Sandwich Recipe By :Moosewood Restaurant New Classics, The Moosewood Collective Serving Size : 4 Preparation Time :0:00 Categories : Moosewood New Classics Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- CHIPOTLE MAYONNAISE DRESSING: 2 tablespoons chipotles in adobo sauce 6 tablespoons prepared mayonnaise 2 tablespoons lime juice SANDWICH: 4 multi-grain or other whole grain rolls 4 fresh lettuce leaves -- rinsed & dried 4 sliced cooked portabellos -- (pg 171) 1/2 red onion -- thinly sliced 2 tomatoes -- cut into 8 slices 2/3 pound sliced mild cheese -- (optional) Mince the chipotle peppers. Combine them with the mayonnaise and lime juice in a bowl and mix thoroughly. Slice open each roll, spread about 1 1/2 tablespoons of the dressing, and place a lettuce leaf on one half. Layer on 1/4 of the sliced portabellos, 1/4 of the sliced red onions, 2 tomato slices, and, if you wish, a slice or two of cheese. You may find yourself eating two sandwiches before you realize what you're doing! We suggest using Monterey Jack, Fontina, Muenster, or some other similarly mild cheese for the best balance of flavors. Karen's Note: I made this sandwich and we all *loved* it. However, the Chipotle Mayonnaise Dressing is more like a dressing -- thinner in consistency. Next time, I think I'd prefer a thicker more " mayonnaise-like " spread, and would leave out the lime juice or only use a small amount.
