Guest guest Posted February 2, 2002 Report Share Posted February 2, 2002 * Exported from MasterCook Mac * Chai Recipe By : Moosewood Restaurant New Classics, page 193 Serving Size : 2 Preparation Time :0:20 Categories : drinks and snacks vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups water 1 piece fresh ginger root -- (1 inch) sliced 1/4 teaspoon black peppercorns 1/2 teaspoon fennel seeds 1/4 teaspoon cardamom seeds 6 whole cloves -- (6 to 8) 2 teaspoons black tea leaves -- heaping or 2 tea bags 3/4 cup milk sugar or mild honey -- to taste Chai rivals coffee as a stimulating pick-me-up, and brewing a fresh pot of chai with heady, exotic spices and fragrant tea leaves feels a little like stirring up a lovely magical potion. If you have a foamer, froth up the milk for a chai latte. Be aware that commercially packaged chai, although convenient, can be quite overly sweetened. Serves 2 Total time: 10 minutes In a medium saucepan, boil the water and spices until the liquid has reduced to 2 cups, 10 to 15 minutes. Remove from the heat, add the black tea or tea bags, and steep for 4 to 5 minutes. Strain the tea, discard the leaves and spices, and return the tea to the saucepan. Add the milk and heat to boiling. Add sugar or honey to taste and serve.
