Guest guest Posted February 2, 2002 Report Share Posted February 2, 2002 xposted veg-rec, mc-rec * Exported from MasterCook * Blue Cornmeal Pancakes w/Blueberries Recipe By :_The Cool Mountain Cookbook_ Gwen Ashley Walters Serving Size : 10 Preparation Time :0:00 Categories : Pancakes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 2/3 cups blue cornmeal 1 cup flour 3 tablespoons sugar 1 teaspoon baking powder 2 eggs 1/4 teaspoon vanilla 2 cups half and half 4 tablespoons butter -- melted 1 cup fresh or frozen blueberries Stir the blue cornmeal, flour, sugar and baking power together. Beat the eggs with the vanilla and half-and-half. Pour egg moisture over cornmeal mixture and stir just until moistened. Stir in melted butter. Heat a nonstick pan or griddle over medium heat. Spray surface with nonstick spray. Ladle 1/4 cup batter onto hot surface. Sprinkle with a few blueberries. Cook until bubbles form on surface and edges start to dry, about 3 to 4 minutes. Turn and cook on the other side for another 2 minutes or until done. Serve with warm maple syrup. Yields: 10 (6-inch) pancakes. " Delicious!
