Herbed Barley and Mushrooms

1/2 cup sliced fresh mushrooms

2 teaspoons olive oil

2 tablespoons minced green onion

1/4 teaspoon crumbled dried rosemary

3 cups broth

1 cup pearl barley

 

Saute mushrooms in olive oil. Add green onion, rosemary, broth (your choice of

flavor), and pearl barley. Bring to boil. Cover, reduce heat to low and cook 45

minutes or until barley is tender and liquid is absorbed.
