Barley Florentine

Amount Measure Ingredient -- Preparation Method

3 cups broth

1 cup pearl barley

1 teaspoon dried basil

1/2 teaspoon onion powder

1 cup thinly sliced fresh spinach leaves

2 teaspoons fresh lemon juice

1 dash nutmeg

 

Place broth, pearl barley, basil and onion powder in saucepan. Bring to boil.

Cover, reduce heat to low and cook 40 minutes or until barley is tender and most

of liquid is absorbed. Stir in spinach leaves, lemon juice and nutmeg. Continue

to cook 5 minutes longer.
