Barley Confetti Toss

3 cup cooked pearl barley -- hot

1/2 cup diced tomato

1/4 cup chopped red bell pepper

1/4 cup chopped green bell pepper

1/4 cup chopped yellow bell pepper

2 tablespoons minced onion

2 tablespoons minced fresh basil

1 teaspoon minced fresh garlic

1 tablespoon red wine vinegar

 

Combine hot cooked pearl barley with diced tomato, chopped colorful bell

peppers, onion, basil, garlic and red wine vinegar. Toss gently and serve.
