Arrabbiata Sauce

Amount Measure Ingredient -- Preparation Method

2 cups onions -- diced

1 teaspoon salt

2 cloves garlic -- pressed (2 to 3)

2 teaspoons olive oil

1 teaspoon red pepper flakes

1 cup bell peppers -- diced

6 cups canned tomatoes with juice -- chopped

two 28-ounce cans

1/4 teaspoon ground black pepper

2 tablespoons fresh basil -- chopped

 

This will become your new “standard sauce”, especially if you like a

little spice in your life!

 

Serves 4 to 6

Total time: 30 minutes

 

In a 2-quart saucepan, saute the onions, salt, and garlic in the oil on

medium heat until the onions are browned and somewhat caramelized, about

10 minutes. Add the red pepper flakes and the bell peppers and cook for

another 2 minutes. Add the chopped tomatoes with their juices and the

black pepper and bring to a simmer. Cook, uncovered, for about 15

minutes, stirring occasionally. Stir in the basil and serve.
