Yields 4 cups Total time: 25 to 30 minutes Warm the oil in a saucepan and add the onions, garlic, oregano, salt, and pepper. Cover and cook on low heat for about 10 minutes, until the onions are soft and translucent. Add the tomatoes, cover, bring to a simmer, and cook for about 10 minutes. In a blender, puree about a cup of the sauce with the Neufchatel. Stir back into the pan; add the basil. Gently reheat, if necessary.
