Creamy Tomato Sauce

1 tablespoon olive oil

1 cup onions -- diced

2 cloves garlic -- minced or pressed

1 teaspoon dried oregano

1/2 teaspoon salt

1/8 teaspoon ground black pepper

3 cups canned tomatoes with juice -- chopped

(one 28-ounce can)

1/4 cup Neufchatel cheese

or cream cheese

3 tablespoons fresh basil -- chopped

 

Here's a creamy, simple, and delicious tomato sauce that tastes and

looks great.

 

Yields 4 cups

Total time: 25 to 30 minutes

 

Warm the oil in a saucepan and add the onions, garlic, oregano, salt,

and pepper. Cover and cook on low heat for about 10 minutes, until the

onions are soft and translucent. Add the tomatoes, cover, bring to a

simmer, and cook for about 10 minutes.

 

In a blender, puree about a cup of the sauce with the Neufchatel. Stir

back into the pan; add the basil. Gently reheat, if necessary.

 

PER 1-OUNCE SERVING: 14 CALORIES, 0.4 G PROTEIN, 0.7 G FAT, 1.6 G

CARBOHYDRATES, 0.2 G SATURATED FATTY ACIDS, 0.7 MG CHOLESTEROL, 73.3 MG

SODIUM, 0.1 G TOTAL DIETARY FIBER
