Tofu Provencal

1 tablespoon olive oil

2 medium onions -- thinly sliced

1 red bell pepper -- thinly sliced

2 garlic cloves -- minced

1 medium zucchini -- thinly sliced

2 teaspoons finely chopped fresh thyme or 1 teaspoon

dried

1 (14 1/2-ounce) can diced tomatoes

1 1/2 pounds firm tofu -- cut into 1 " cubes

pinch salt

Freshly ground pepper

1/4 cup chopped fresh basil

 

Heat the oil in a nonstick skillet, then add the onions. Saute until lightly

browned, about 5 minutes. Add the bell pepper and

saute until it begins to soften, 2-3 minutes. Add the garlic and saute until

fragrant, about 30 seconds. Stir in the zucchini and

thyme and saute until lightly browned, 4-5 minutes.

 

Stir in the tomatoes; reduce the heat and simmer, partially covered, stirring

occasionally, for 10 minutes. Stir in the tofu, salt,

and pepper; simmer, uncovered, until heated through, about 5 minutes longer.

Stir in the basil just before serving.
