Sweet-and-Sour Green Beans

1 pound green beans -- trimmed and cut into 2-inch lengths

2 tablespoons reduced-sodium soy sauce

2 tablespoons ketchup

1 teaspoon red wine vinegar

1 teaspoon cornstarch -- dissolved in 3 T water

1/2 teaspoon hot pepper sauce

1 garlic clove -- minced

1 (8-ounce) can bamboo shoots

or sliced water chestnuts -- drained

1 teaspoon dark sesame oil

 

Place the green beans in a steamer basket and set in a saucepan over 1 inch of

boiling water. Cover and steam until tender-crisp,

about 5 minutes; drain.

 

Combine the soy sauce, ketchup, vinegar, the cornstarch mixture, and the hot

pepper sauce in a small bowl.

 

Spray a nonstick wok or skillet with nonstick spray and set over high heat. Add

the green beans and garlic. Stir-fry the beans 2

minutes; add the soy sauce mixture and cook, stirring, until thickened, about 2

minutes. Stir in the bamboo shoots and drizzle with

the sesame oil. Serve at once.
