Guest guest Posted January 30, 2002 Report Share Posted January 30, 2002 * Exported from MasterCook * Vegetable Spread Recipe By :Weight Watchers Great Cooking Every Day Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 pound reduced-fat firm tofu 1 teaspoon vegetable oil 1 medium onion -- finely chopped 3/4 cup finely chopped mushrooms 1 cup chopped steamed green beans 1/4 cup chopped walnuts 2 tablespoons chopped flat-leaf parsley 1 teaspoon chopped sage 1/4 teaspoon ground allspice 1/4 teaspoon salt Freshly ground pepper Parsley sprigs -- optional Place the tofu in a single layer between two small flat plates. Weight the top with a heavy can. Let stand 30-60 minutes (do not press for longer than 60 minutes). Pour off and discard the water. Heat the oil in a large nonstick skillet, then add the onion. Saute until softened. Add the mushrooms and saute until wilted. Add the beans and walnuts and saute until heated through, about 3 minutes. Transfer the mixture to a food processor. Add the parsley, sage, allspice, salt and pepper; pulse until fairly smooth. Transfer to a bowl. Coarsely shred the tofu and squeeze to remove any excess moisture. Stir the tofu into the onion mixture. Refrigerate, covered, until chilled, at least 2 hours. Garnish with the parsley sprigs, if desired.
