Braised Peas with Ginger and Cilantro

2 teaspoons vegetable oil

2 teaspoons sesame oil

1 clove garlic -- minced

2 teaspoons finely chopped fresh ginger

4 scallion white only -- finely chopped

(reserve green for garnish)

1/2 cup chopped cilantro leaves

2 cups fresh shelled peas

2 tablespoons water

GARNISH:

chopped scallion greens

 

In a medium saucepan, heat vegetable and sesame oil. Add garlic, ginger,

scallions, and cilantro and stir-fry for 2 minutes. Add peas and 2 tablespoons

water. Cover and cook until peas are just tender (don't overcook).

 

Serve garnished with scallion tops.
