Autumn Smoothie

1 pear -- ripe & fresh

peeled -- cored and chopped

1/2 cup unsweetened apple juice

1/2 cup soy milk

1 teaspoon pure maple syrup

or sugar

1/4 teaspoon pure vanilla extract

2 drops pure almond extract

1 pinch ground cinnamon

 

Delectable says it all. We hope this smoothie inspires you to come and

see the amazing colors of autumn in upstate New York for yourself. Visit

in mid-October and stop in at Moosewood.

 

For the best flavor and consistency, use a really ripe, sweet, soft

pear. If your ingredients aren't cold, add ice to the blender or your

glass, but don't put ice cubes in a food processor— use crushed ice.

 

Serves 1

Yields about 1 1/2 cups

Total time: 5 minutes

 

Puree the ingredients in a blender or food processor until smooth.
