I don't eat raw -- and I remember there is a way to get around that...by cooking a tad first (or a store-bought product?). Anyone have that info (preferably in MC format) for us all? Thanks, Brenda * Exported from MasterCook * Homemade Mayonnaise (Lee Bailey) Recipe By :Lee Bailey's - The Way I Cook Serving Size : 0 Preparation Time :0:00 Categories : Condiment Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon dry mustard 1 teaspoon salt 1 pinch freshly ground black pepper 3 tablespoons fresh lemon juice 1 large egg 1 1/4 cups vegetable oil 3/4 cup olive oil 1 dash Tabasco sauce -- (optional) Place mustard, salt, pepper, lemon juice, and egg in a food processor. Combine the oils. With the motor running, pour oil in a slow, steady stream through the feed tube until all has been emulsified. Stir in Tabasco if using. Makes about 2 cups VARIATIONS: Substitute 1 to 2 teaspoons Dijon mustard or green peppercorn mustard for the dry mustard. Substitute lime juice for the lemon juice.
