If you've found a good-quality curry powder or garam masala, use it in this dish, but if you would like to concoct your own curry spice mix, you can start with the amounts we suggest in the ingredient note for a mildly curried taste. Add more spices and cayenne for a more pungent .flavor . Serves 4 to 6 Total time: 25 minutes In a covered saucepan, warm the oil or butter on medium-high heat. Add the shallots or onions and saute for 3 minutes. Add the curry powder, stir well, and saute until the spices darken and the shallots or onions are lightly golden and soft, about 3 minutes longer. Stir in the corn, cover, and heat for about 3 minutes. Pour in the coconut milk, cover, and heat thoroughly, but not to a boil. When the corn is tender and hot, remove from the heat and stir in the lime juice. Add salt and pepper to taste. If you like, serve sprinkled with cilantro or scallions.
