Guest guest Posted January 29, 2002 Report Share Posted January 29, 2002 * Exported from MasterCook * Sweet and Sour Vegetables and Tofu Recipe By :Moosewood Collective Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cakes tofu -- pressed and cubed SAUCE: 1 1/2 teaspoons grated fresh ginger root 4 tablespoons brown sugar or honey 6 tablespoons white vinegar 3 tablespoons tamari soy sauce 1/4 cup tomato paste or catsup ********************** 3 tablespoons vegetable oil 3 cups thinly sliced onions 1 tablespoon grated fresh ginger root 2 medium carrots -- diagonally sliced 1/2 pound string beans -- whole, if small, or cut into 3-inch pieces 1 large red or green pepper -- in long slices 4 cups sliced mushrooms -- (1 pound) 4 cups zucchini rounds 3/4 cuo fresh or canned pineapple -- in chunks (optional) 1 tablespoon cornstarch -- dissolved in 1/2 cup cold vegetable stock, pineapple juice, or water hot chili oil -- optional 2 scallions -- chopped Stir together the sauce ingredients and set aside, and prepare the tofu and vegetables before you begin to stir-fry. Heat the oil in a wok or a pot large enough for all the ingredients. Stir-fry the onions and ginger. When the onions are translucent, add the carrots and continue cooking for 3 to 4 minutes before adding the beans (2 more minutes), the pepper (2 more minutes), and then the mushrooms and zucchini. Turn down the heat, cover the wok or pot, and cook, stirring once or twice, until the vegetables are tender but still crisp. Stir in the pineapple, tofu, sauce, and dissolved cornstarch and bring to a boil. Simmer, stirring gently, for 3 or 4 minutes. If a hot and spicy dish is desired, add a few dashes of hot chili oil.
