Shiitake Cider Sauté

Amount Measure Ingredient -- Preparation Method

5 cups mixed salad greens

4 cloves garlic -- minced

1 tablespoon olive oil

1 tablespoon margarine or butter

8 ounces shiitake mushrooms -- stemmed and sliced

1/4 cup cider or apple juice

1 tablespoon soy sauce

2 teaspoons garlic Chile paste -- (2 to 4)

 

1. Arrange greens on a serving platter. In a large skillet over medium

heat, saute garlic in oil and margarine or butter until golden and

fragrant, about I minute. Be careful not to burn.

 

2. Add mushrooms and toss to coat. Stir in cider and soy sauce. Add garlic

chile paste to taste. Saute for 2 more minutes. Arrange hot mushrooms

and sauce over greens. Serve immediately.

NOTES : Admittedly, apple cider is not a typical Thai ingredient, but it

works well here. Serve warm over mixed greens for a delicious

side dish or appetizer. Look in you supermarket's Asian food

section for garlic chile paste.
