Carrot Ginger Soyffle

Amount Measure Ingredient -- Preparation Method

2/3 cups dried soybeans -- soaked overnight at

room temperature

2 1/4 cups water

1 carrot -- diced

2 tablespoons olive oil

2 tablespoons tamari or soy sauce

1/2 teaspoon salt -- or to taste

1/3 cup old-fashioned rolled oats

1 medium onion -- finely chopped

1/2 cup finely chopped parsley

1 tablespoon minced ginger root

Cooking spray or oil

 

1. Drain and rinse beans. Preheat oven to 350' and lightly spray an 8-inch

round or square cake pan.

 

2. In a small saucepan, bring 2-1/4 cups water to a boil. Add carrot'.

cover, and simmer for 15 minutes. Remove from heat, uncover, and let cool

for a few minutes.

 

3. In a blender or food processor, combine beans, oil, tamari, and salt.

Puree until smooth, gradually adding carrot cooking liquid. Add carrot

and oats, and process again until smooth, using a spatula to scrape down

the sides, periodically. Add onion, parsley, and ginger, and process about

5 seconds more.

 

4. Pour mixture into prepared pan and bake about 1 hour, until top is a

dark golden brown. Remove from oven. Let up a few minutes before serving.

NOTES : This creamy casserole will rise up and form a nice crust as it

bakes. And, like a soup, it will begin to fall as it cools. For a

higher souffle bake in a smaller dish or a few small ramekins. Any

leftovers of this pdtilike mixture make an excellent sandwich

spread.
