Guest guest Posted January 28, 2002 Report Share Posted January 28, 2002 * Exported from MasterCook * Apple Quesadillas Recipe By :Moosewood Collective Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 large medium-tart apples -- or 8 medium, such as Crispin, peeled, cored, and sliced into 1/4-inch-thick slices (about 8 cups) 2 tablespoons fresh lemon juice 1 teaspoon ground cinnamon 3 tablespoons butter 1 tablespoon pure maple syrup 6 8- or 9-inch wheat tortillas* cooking spray or vegetable oil *We recommend MexAmerica Flour Tortillas. They are a generous 9-inch size, come 10 to a package in a resealable bag, and are both delicious and pliable. They are in the refrigerated section of many supermarkets. In a large bowl, toss the sliced apples with the lemon juice and cinnamon. Melt the butter in a deep 10- or 12-inch skillet. Stir in the apples, cover, and cook on medium heat for 5 to 10 minutes, stirring occasionally, until tender but still firm enough to retain their shape. Stir in the maple syrup, cover, and set aside. Warm a lightly oiled, preferably nonstick skillet on high heat. Place a tortilla in the skillet and heat for 1 to 2 minutes, Flip it over, place 1 scant cup of cooked apples on one half and cook for another 1 1/2 minutes, until the tortilla is crisp and lightly browned. Fold in half transfer to a warm serving platter, and cover with a clean towel. Make 5 more quesadillas the same way, then serve immediately. If you make the apple filling ahead or have any left over, it will keep, covered, for about 4 days in the refrigerator. Just reheat the filling while warming the oil for the quesadillas, and in minutes you're ready to eat. True apple lovers will want to savor the quesadillas unadorned, but for a fancy dessert,try Caramel Sauce (opposite), a dollop of vanilla ice cream, maple syrup, or fresh whipped cream.
