Guest guest Posted January 28, 2002 Report Share Posted January 28, 2002 * Exported from MasterCook * Fruit with Lime Yogurt Cream Recipe By :Chatelaine, September 2001 Serving Size : 6 Preparation Time :0:05 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups plain yogurt 2 tablespoons granulated sugar 1 tablespoon freshly squeezed lime juice 1 teaspoon finely grated lime peel 1/4 teaspoon vanilla extract 6 cups mixed berries and sliced peaches To thicken yogurt, line a sieve with cheesecloth or a new reusable kitchen cloth. Place over a bowl and pour in yogurt. Cover and leave at room temperature for at least 2 hours or refrigerate overnight. Discard liquid in bowl. Stir thickened yogurt with sugar, lime juice, peel and vanilla. Taste, then stir in more juice or sugar, if needed. Serve fruit in bowls topped with a generous dollop of yogurt cream. Leftover sauce will keep well, covered and refrigerated, for up to 1 week. Nutrients per serving: 6.3 gm protein, 3.8 gm. fat, 23.8 gm. carbohydrates, 0.7 mg. iron, 200 mg. calcium, 417 mg. sodium, 5.5 gm. fibre, 147 calories. Excellent source of vitamin C. Good source of calcium and folacin.
