Guest guest Posted January 28, 2002 Report Share Posted January 28, 2002 * Exported from MasterCook * Low-Fat Crunchy Coleslaw Recipe By :Chatelaine, August 2001 Serving Size : 4 Preparation Time :0:20 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Dressing: 1/2 cup water 1/2 cup cider vinegar 2 teaspoons finely grated ginger or 1 tablespoon bottled minced ginger 1 teaspoon Dijon mustard 1/2 jalapeño pepper -- seeded and minced 1 tablespoon granulated sugar 1/2 teaspoon salt Salad: 1 small red onion 1 medium English cucumber 1 cup snow peas 1 sweet yellow pepper 1 sweet red pepper 2 cups shredded napa cabbage 2 cups shredded red cabbage 2 tablespoons chopped coriander Place water, vinegar, ginger, Dijon, jalapeño, sugar and salt in a small saucepan. Stir well and set over high heat. Bring to a boil, reduce heat to medium-low and simmer, uncovered, from 2 to 3 minutes. Remove from heat and cool to room temperature. Cut onion in half lengthwise, then place cut-side down on a cutting board and slice into long thin strips. Place in a large bowl. Cut cucumber in half lengthwise, scoop out any seeds, if you like, then cut into 1/4-inch slices. Remove stems from snow peas and slice into thirds. Cut peppers into thin strips. Add vegetables to onion and mix in cabbages. Pour cooled dressing over salad. Mix well. Refrigerate at least 4 hours or overnight. Stir in coriander just before serving. Nutrients per 1 1/2-cup serving: 3.4 gm. protein, 0.6 gm. fat, 21.1 gm. carbohydrates, 1.5 mg. iron, 91 mg. calcium, 318 mg. sodium, 4 gm. fibre, 91 calories. Cabbage not only provides a healthful low-cost alternative to common greens, it tastes better the longer it sits in dressing.
