Guest guest Posted January 28, 2002 Report Share Posted January 28, 2002 * Exported from MasterCook * Black Bean Chili Recipe By :Imar Hutchins & Dawn Marie Daniels Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 pounds cooked black beans -- (or three 15-ounce cans of cooked black beans) 2 tablespoons olive oil -- (2 to 3) 1 onion -- chopped 3 cloves garlic 1 cup TVP chunks 1 vegetable bouillon cube 1 teaspoon chili paste 35 ounce can peeled tomatoes 2 tablespoons chili powder 1/4 cup fresh parsley -- chopped 1 teaspoon Adobo sauce 1/2 teaspoon cayenne pepper -- optional, if you like your chili hot salt and pepper -- to taste water -- as necessary Begin by placing the black beans in a pot. Or, if you are not using canned beans, begin by cooking the black beans in a large pot according to the directions on their packaging, adding salt to taste. Next, in a skillet, heat 2-3 tablespoons of olive oil and saute onions and garlic. Next add the cup of TVP and the bouillon cube to the skillet and allow it to brown. Use a pancake flipper to make sure that the TVP is evenly browned and that the bouillon cube is dissolved. Lastly add one teaspoon of chill paste to the skillet. Next add the contents of the skillet to the large pot with the beans. Add the canned tomatoes, 2 tablespoons of chill powder, parsley and Adobo to the pot. Simmer under low to medium heat for 30 to 40 minutes, stirring occasionally and adding water if necessary to achieve desired consistency. Add cayenne pepper, if desired, and salt and pepper to taste.
