Try this versatile salad beside Wild Rice Pilaf (page 147) or Breaded Polenta Cutlets (page 262). Serves 6 to 8 Total time: 5 to 10 minutes Cut the celery crosswise into 1/2-inch thick pieces to make about 4 cups sliced. Place it in a serving bowl and sprinkle in the crumbled blue cheese. Add the salt, pepper, and olive oil and toss well. Serve chilled.
