Guest guest Posted January 28, 2002 Report Share Posted January 28, 2002 This recipes comes from Healthy Lifestyles, and insert in this months Vegetarian Times. kathleen * Exported from MasterCook * Banana Oatmeal Muffins Recipe By : VT Healthy Lifestyles, Winter/Spring 2002, page 10 Serving Size : 10 Preparation Time :0:00 Categories : Breads, Quick Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups rolled oats 1/4 cup soy flour 3/4 cup unbleached flour 1/2 cup sugar 1 1/2 teaspoons baking powder 1 teaspoon baking soda 1/4 teaspoon salt 1 egg -- beaten 2 cups mashed bananas 1/4 cup soybean oil 1/4 cup butter -- melted 1/4 cup raisins 1/4 cup ground-roasted soynuts MAKES 10 TO 12 MUFFINS 1. Preheat oven to 375F. 2. Grease 10 to 12 medium muffin cups. 3. In large bowl, combine oats, both flours, sugar, baking powder, baking sods and salt. Stir in egg, mashed bananas, soybean oil and melted butter. Fold in raisins and nuts. Pour into prepared muffin cups, and bake for 20 to 25 minutes, or until toothpick inserted in center comes out clean. Let cool in pan for at least 15 minutes. These muffins can be frozen for up to one month. As in Vegetarian Times Magazine, February 2002, page 10.
