Chocolate Coconut Glaze

3 tablespoons unsweetened grated coconut

1 1/2 cups semisweet chocolate chips

3 tablespoons coconut milk

1/4 teaspoon pure coconut extract

 

Preheat the oven or toasted oven to 325 ºF.

 

Sprinkle the coconut on a small baking tray and lightly toast it for 1 to 3

minutes until golden.

 

In a double boiler or small heavy saucepan, combine the chocolate chips with the

coconut milk and coconut extract. Melt on medium heat, and whisk until smooth.

Spread the glaze over the cooled cake and top with toasted coconut. Allow the

glaze to cool before cutting the cake.
