Egg-Free Banana French Toast

6 slices whole wheat bread

1 banana -- (ripe) mashed

1/2 cup reduced-fat soymilk

1 tablespoon nutritional yeast flakes

1 teaspoon sugar

or sweetener of your choice

1 teaspoon vanilla

1/2 teaspoon salt

1 pinch nutmeg

 

This is a variation of Bryanna's Egg-Free French Toast.

 

You won’t miss all the butter and eggs usually associated with this

breakfast dish — it’s delicious!

 

Makes 6 slices of toast

 

Have the bread ready. Mash the banana and blend or whisk together with

all the other ingredients in a shallow bowl. Dip the bread slices into

this mixture, and cook either on a non-stick griddle until browned on

both sides, or on a greased cookie sheet in a 400 degrees F oven until

golden on both sides, turning once. For an interesting change of pace,

bake the French toast in a non-stick waffle iron until golden—brown.

 

Serve with maple syrup or your favorite topping.
