For us Sunday is the last day of the week; we start the week on Monday... Here, I'll give you something to giggle about me: This past week I went to the library to get " The (Almost) No Fat Cookbook " . Not only did they not carry this book, but none of her other books either. An extensive search showed that in the Denver area, in a 2 hour radius, there where only 2 copies available. It would take them a week to get the book to my library, and I finally decided that I didn't have the time to drive and spend 2 hours on the road. (I nearly went out to buy the book later...) This morning, ready to go to bed, I looked at a bookshelf I don't frequently use. (Ellen, you are absolutely right, a cookbook inventory is a must): In my bookshelf, right in front of my eyes stood the following two books: - The (Almost) No Fat Cookbook and - The (Almost) No Fat Holiday Cookbook, by Grogan. Still shaking my head, I know this 'Egg-Free French Toast' recipe comes to late for today's brunch, maybe someone will enjoy it next weekend.... Makes 6 slices of toast Have the bread ready. Blend or whisk together all the other ingredients in a shallow bowl. Dip the bread slices into this mixture, and cook either on a non-stick griddle until browned on both sides, or on a greased cookie sheet in a 400 degrees F oven until golden on both sides, turning once. For an interesting change of pace, bake the French toast in a non-stick waffle iron until golden—brown. Serve with maple syrup or your favorite topping.
