Guest guest Posted January 27, 2002 Report Share Posted January 27, 2002 * Exported from MasterCook * Tofu " Mayonnaise " Recipe By :Deborah Madison, Vegetarian Cooking for Everyone Serving Size : 0 Preparation Time :0:00 Categories : Sauces and Condiments Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ounces soft silken tofu 1/4 cup water 1/3 cup mild olive oil 2 tablespoons extra virgin olive oil 2 tablespoons fresh lemon juice 2 teaspoons Dijon mustard 3 scallions -- white parts only, thinly sliced 1 teaspoon grated lemon zest Salt and freshly milled white pepper Puree the tofu, 1/4 cup water, olive oil, lemon juice, and mustard in a blender or food processor until smooth. Add the scallions and lemon zest and season with salt and pepper to taste. Tofu Garlic " Mayonnaise " : Pound 4 to 6 garlic cloves with 1/2 teaspoon salt in a mortar until it becomes a paste. Add the paste once the sauce is emulsified.
