Guest guest Posted January 26, 2002 Report Share Posted January 26, 2002 * Exported from MasterCook * Buttery Butter Beans Recipe By : Beans Greens and Sweet Georgia Peaches by Damon Lee Fowler Serving Size : 4 Preparation Time :0:00 Categories : Sda-Veg-Recipes2 (AT) Egroups (DOT) Com Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups fresh or good-quality frozen green butter -- beans or butter peas (about 1 pound shelled weight) Salt 4 tablespoons unsalted butter, cut into small pieces Put the beans in a colander and rinse them under cold running water. Put them in a pan with enough cold water to just cover them, and place the pan over medium-high heat. Bring the liquid to a boil and reduce the heat to medium low. Loosely cover the pan and simmer, stirring frequently, until the beans are nearly tender, about 15 to 20 minutes. Add a healthy pinch of salt, stir, and let the beans cook, uncovered, until they are tender, about 5 minutes more. Raise the heat to medium high and quickly reduce the cooking liquid until it is beginning to get thick, about 2 to 3 minutes more. Turn off the heat and stir in the butter. The cooking liquid should be thick and creamy and coat the beans. Serve at once. - - - - - - - - - - - - - - - - - - NOTES : You can make this several hours or even a day or two ahead and reheat them, but don't reduce the cooking liquid (it thickens as it site) or add the butter until you are ready to serve the beans. Needless to say, there's no substitute for the butter here. No other fat-not even olive oil-will work. Don't even think about using margarine.
