Guest guest Posted January 25, 2002 Report Share Posted January 25, 2002 * Exported from MasterCook * Bow Tie Noodles with Sauteed Chard and Toasted Almonds Recipe By :More Recipes from a Kitchen Garden 1995 Shepherd and Raboff Serving Size : 6 Preparation Time :0:00 Categories : Greens Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 quarts fresh chard leaves (or 2-large bunches chard) 2 tablespoons olive oil 2 tablespoons butter 1 medium onion -- chopped 3 garlic clove -- minced 1 tablespoon tomato paste (or sun dried tomato dice/paste) 1 tablespoon fresh lime or lemon juice 1/4 cup chicken or vegetable broth 10 ounces bow tie noodles 3/4 cup freshly grated Parmesan cheese or Asiago cheese 2 tablespoons chopped parsley 2 teaspoons finely chopped fresh marjoram 1 teaspoon fresh thyme 1 tablespoon minced chives salt and pepper 1/2 cup chopped toasted almonds 1. Cut out center ribs and stems of chard; cut them into thin slices. Slice chard leaves into 1/2-inch strips. 2. In a large skillet heat oil and butter and add onion and garlic. Saute until fragrant, about 2 to 3 minutes. Add chard stems and saute until softened. Add chard leaves and saute, stirring for 4 to 5 minutes until wilted. Stir in tomato paste or sundried tomatoes, lime or lemon juice and chicken broth. Heat thoroughly. 3. In a large pot, bring 3 to 4 quarts of lightly salted water to a boil. Add bowl ties and cook until done all dente. Drain noodles, combine with chard mixture, Parmesan or Asiago cheese, and herbs. Heat trough; add salt and pepper to taste. 4. Transfer to a serving dish and sprinkle with the nuts. Add a little additional cheese, if desired. Description: " Tastes like freshly sauced ravioli without all the work.
