Stir Fried Kale / Sam's

Amount Measure Ingredient -- Preparation Method

2 tablespoons peanut oil -- see variation

1 teaspoon sesame oil

2 teaspoons minced garlic

1 pound kale -- prepared as directed

2 cups sliced fresh mushrooms

1/4 cup chicken or vegetable stock

2 1/2 tablespoons oyster sauce

1/2 teaspoon sugar

1/4 teaspoon pepper

 

In a wok or large heavy skillet, heat peanut and sesame oils. Add garlic and

stir fry 30 seconds, until fragrant. Add the kale and mushrooms, tossing

frequently over high heat for 3 minutes. Add the stock, oyster sauce, sugar and

pepper. Stir fry for another 2 minutes until vegetables are tender crisp and

still bright green.

 

VARIATION: replace oils with vegetable cooking spray and add 4 drops sesame oil

for flavor: 72 Calories; 1g Fat (10.9% calories from fat).
