1/2 pound dry black-eyed peas

2 cups water

1 1/2 cups onions -- chopped

1 large garlic clove -- minced

1 bay leaf

1/2 teaspoon ground black pepper

1/2 teaspoon crushed dried red pepper

1/2 teaspoon liquid smoke

1 tablespoon soy sauce

 

Serves 4-6

 

This spicy black-eyed pea dish is traditionally served on New Year's Day in

the South, but this version is excellent any day of the year. Most recipes

instruct you to add the rice to the beans, but I prefer the beans cooked

separately and served over the rice.

 

Soak dry black-eyed peas for at least 8 hours in enough water to cover.

 

Drain and rinse. Place the soaked beans in a large saucepan with remaining

ingredients except soy sauce.

 

Bring to a boil, let simmer for 3 minutes, then turn the heat to low,

cover, and simmer for 30-60 minutes, or until the beans are tender as you

like them. If you wish to pressure cook, cook at 15 lbs. pressure for 5-8

minutes.

 

Add soy sauce.

 

Remove the bay leaf, and adjust salt to taste. Mash the beans slightly,

and serve over steamed rice.
