Fat-Free Fried Rice

Amount Measure Ingredient -- Preparation Method

7 green onions -- chopped, up to 8

1 large celery stalk -- minced

1 clove garlic -- minced

1 1/2 cups fresh mung bean sprouts

3 large sliced fresh mushrooms -- up to 4

3/4 cup green cabbage -- finely shredded

4 1/2 cups cold cooked brown rice

2 1/2 tablespoons soy sauce

black pepper -- to taste

1 tablespoon Sesame Meal -- (opt.), up to 2

(see separate recipe)

1 tablespoon vegetarian bacon bits -- (opt.), up to 2

1 cup Smoky Baked Tofu -- cubed

(see separate recipe)

OR cooked seitan -- slivered

 

Serves 5-6

 

To make this dish properly, make sure the cooked rice is cold.

 

In a large, heavy, lightly oiled skillet or wok, steam-fry onions, celery

and garlic. After about 3 minutes, add and steam-fry the bean sprouts,

mushrooms and cabbage. After about 2 minutes, add the brown rice. Lower

the heat to medium, and steam-fry for 3-4 minutes. Add remaining ingredients.
