Scatter the garlic and parsley over the tomatoes, drizzle with olive oil, and season with salt and pepper. Let the salad rest for at least 10 minutes (but not longer than 1 hour), so that the flavors can mingle. Variations: With Cheese: Scatter ½ cup (2 ounces) of a grated hard cheese, such as dry jack, Parmigiano-Reggiano, romano, or aged asiago, over the tomatoes after the olive oil has been added, or use a vegetable peeler to make curls of 2 ounces of cheese, and scatter them over the tomatoes just before serving. With Fresh Mozzarella and Basil: slice 6 ounces of fresh mozzarella and place the slices here and there between the tomato slices.
