Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 pound red seedless table grapes, such as -- Red Flame

6 ounces Roquefort, Oregon blue, or other -- blue-veined cheese

1/2 cup (1/2 to 3/4) heavy cream

1 cup toasted walnuts -- finely chopped

Fresh grape leaves for garnish -- optional

Wash the grapes thoroughly, pluck them from their stems, and dry them

thoroughly. Discard any bruised or damaged grapes.

In a food processor fitted with a metal blade, combine the cheese and cream,

pulsing quickly until the mixture is smooth. Transfer the mixture to a medium

bowl. Place the walnuts in another medium bowl.

Add 3 or 4 grapes at a time to the cheese mixture and use the tip of a spoon to

roll each grape around until it is coated with cheese. Carefully transfer each

grape to the bowl of toasted walnuts. Shake the bowl so that the grape rolls

around in the walnuts and becomes fully coated. Set each covered grape on a wax

paper-lined baking sheet. Continue until all the grapes are coated. Refrigerate

the grapes for at least 2 hours before serving.

Arrange the grapes on a serving platter, and garnish with fresh grape leaves, if

you like.
