The water will turn a little yellow and cloudy. to keep tofu fresh and to keep it's bulk we store it covered in water. (I used filtered water). also, water evaporates a bit, even in the fridge. I replace the water every 24 to 36 hours. Freshening the water extends the shelf life -- which is only about 3 days after we open it.
