Sambar powder

Whole red peppers - 1/4 kg

Coriander seeds - 1/4 kg

Toor Dal - 200 g

Gram dal - 200 g

whole black peppers - 25 g

asafoetida - a pinch.

or

whole red peppers - 10 cups, coriander seeds - 10 cups, toor dal - 1 cup,

gram dal - 1 cup, black peppers - 1/4 cups, asafoetida powder - 1 tsp. Dry

the above ingredients in sun and grind into a nice powder.

 

 

Sambhar

Ingredients:

1 cup mixed vegetables (onion, beans, carrot, tomato, brinjal, lady's

finger)

2 green chillies

1/2 red gram dal

3tsp sambhar powder

pinch turmeric

2 cups water

lemonsized tamarind

salt to taste

bunch of coriander

For tempering:

2 tsp ghee

1 tsp mustard seeds

1/2 tsp cumin seeds

1 dry red chili halved

2 cloves garlic crushed

few curry leaves

Method:

Pressure cook the dal keep aside

Chop the vegetables, squeeze out the juice from the tamarind (alternatively

you can use 2 tsp tamcon). Take a big sauce pan add the cooked dal

vegetables, sambar powder, tamarind and the rest of the ingredients and let

it cook on medium heat till the vegetables are cooked and tender. Take off

heat and temper.

Method for tempering:

take a pan and heat the ghee and add all the ingredients except curry leaves

, when the mustard seeds splutter add the curry leaves and take off heat and

it to sambar.

 

 

Vegetable Noodles

Ingredients:

1 packet fresh noodles

1 carrot chopped into small strips

1/4 cup finely chopped beans

Handful of green peas

3-4 florets broccoli

1/4 cup shredded cabbage

2 eggs

1/4 tsp chilli paste

1/2 tbsp garlic puree

1/4 tbsp ginger puree

2 tbsp soysauce

salt to taste

pepper to taste

1 tbsp oil

Method:

Heat the oil in a wok till it is very hot and add the ginger garlic and

chilli paste and break the eggs and pour directly into the wok scramble the

eggs and mix, let the egg cook completely Now add the chicken, vegetables,

salt and soy sauce and cook on high for 3 minutes, turn the heat to medium

and cook till the vegetables are slightly tender and slightly crispy and the

chicken is cooked. Now add the noodles and mix with a fork separating the

noodles , mix well sprinkle pepper and take off heat.

Packet of frozen stir fry vegetables can be added instead of vegetables.

 

 

 

Fried Rice

Ingredients

Rice - your estimation

Water - as per you use

Salt - as needed

Beans - 10

Capsicum - 1 big

Carrots - 10 (baby carrots or 1 big one)

Onion leaves (in telugu we call ulli kadalu) - say a bunch or less

Butter - small slice

Oil - sufficient for frying

Method:

Cut Beans into small pieces, Carrots and Capsicum into thin medium sized

slices and Onion leaves also into small pieces. (If you like you may also

add grean peas.)

First take rice (use basmati for better result), add water, salt and butter

slice in it and now cook the rice.

In a separate vessel, take a little bit of oil sufficient for frying and add

all the above vegetables and on a medium heat fry them till tender. Lastly

add a very little bit of salt.

Now, lastly take the rice in a big pan and mix this fried vegetables.

This fried rice is good along with any gravy
