Guest guest Posted January 17, 2002 Report Share Posted January 17, 2002 * Exported from MasterCook * Spicy Orange Cilantro Tofu Kebabs Recipe By :Northwestern Memorial Wellness Institute Serving Size : 8 Preparation Time :0:00 Categories : Grilling Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2/3 cup orange low-sugar preserves 1/2 cup lime juice 1/3 cup chopped cilantro 1/4 cup balsamic vinegar 1/4 cup low sodium ketchup 1/4 cup Worcestershire sauce 1 tablespoon hot sauce -- or to taste 1/4 teaspoon ground black pepper 1 16-oz block nigari tofu or extra firm tofu -- cut into 24 cubes 1 green bell pepper 1 red bell pepper 1 yellow bell pepper 8 mushrooms 8 cherry tomatoes 2 small zucchini Cut each pepper into 8 large pieces. Cut the zucchini into 8 thick cubes. In a medium saucepan, heat and stir first 8 ingredients until melted and smooth. On each skewer, thread in this order: mushroom, red pepper, tofu, green pepper, tofu, yellow pepper, zucchini (thru skin), tofu and tomato. Brush 1/2 the sauce over the kebabs and bake or grill for about 10 minutes. Brush remaining sauce over kebabs and continue cooking for another 2 to 3 minutes or until the vegetables are tender.
