Grape and Pasta Saute

Amount Measure Ingredient -- Preparation Method

8 ounces gnocchi or large shell pasta -- cooked and drained

1/2 cup onion -- chopped

2 teaspoons olive oil

1 cup pea pods -- fresh or frozen

1 cup bell pepper (red or yellow) cubes

1 cup sliced mushrooms

1/2 teaspoon dried oregano

2 cups seedless grapes

garlic salt and pepper -- to taste

 

Saute in oil in non-stick skillet until tender. Add pea pods, peppers,

mushrooms, and oregano. Cook 2 to 3 minutes or until vegetables are

crisp-tender. Stir in grapes and pasta. Add salt and pepper to taste, and heat

thoroughly. Variation: add cooked chicken or shrimp and sprinkle with grated

parmesan cheese.
