Guest guest Posted January 17, 2002 Report Share Posted January 17, 2002 * Exported from MasterCook * Carrot Zucchini Mushroom Loaf Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large onion -- chopped 4 1/2 C grated carrots or zucchini or combination of both 1 lb. mushrooms -- chopped 5 eggs 4 cloves garlic -- minced 1 C breadcrumbs -- divided 1 C grated cheese -- divided (see notes above) 1/4 C + 2 T butter 2 tsp. basil 1/2 tsp. tarragon 1/2 tsp. salt 1 tsp. pepper Serves 4-6 Pre-heat oven to 350° F. Sauté garlic, mushrooms and onion in 1/4 cup butter until soft. Combine 1/2 cup bread crumbs and 1/2 cup grated cheese and mix with all other ingredients. Press into a buttered loaf pan and sprinkle remaining bread crumbs and cheese over the top. Dot remaining butter on the top, cover with foil and bake for about 30 minutes. Remove foil and bake an additional 5 minutes or until golden brown.
