Miller, RD Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Cornmeal Crust: 1 cup all-purpose flour 1/4 cup cornemal 1/8 teaspoon salt 1/3 cup vegetable shortening 1/4 cup cold water Sweet Potato Filling: 1 1/2 cups cooked mashed sweet potatoes 3/4 cup maple syrup 2/3 cup evaporated skim milk 2 eggs 1/4 cup margarine -- melted 1 teaspoon vanilla 1 teaspoon cinnamon 1/4 teaspoon salt 1/4 teaspoon nutmeg 1/4 teaspoon ginger Crust: Combine flour, cornmeal, and salt. Cut in shortening until mixture resembles coarse crumbs. Add cold water I tablespoon at a time, stirring lightly until mixture forms a ball. Roll out on lightly floured surface to form a 13-inch circle. Fit loosely into a 9-inch pie plate; trim. Turn edges under and flute. Filling: Preheat oven to 375F. Combine all filling ingredients in large bowl; beat until smooth. Pour into prepared crust. Bake about 45 minutes or until knife inserted in center comes out clean. Serve warm or cold. If desired, add a dollop of low-fat whipped topping for garnish.
