Curried Cauliflower With Cashews

Amount Measure Ingredient -- Preparation Method

2 teaspoons unsalted butter

1 teaspoon curry powder

1/4 cup whole raw cashews

1/2 cup purified water -- (1/2-3/4)

1/2 teaspoon salt

1 head cauliflower -- broken into florets

1 tablespoon flax seed oil

or unsalted butter

 

Melt the butter in a large skillet, over medium heat. Add the curry powder and

cashews, and cook until nuts are toasted and golden, about 3 minutes, stirring

frequently. Transfer nuts to a large serving bowl.

 

Add the water and salt to the skillet, and bring to a boil. Add the cauliflower,

lower flame and cover. Steam 10 minutes.

 

Add the cauliflower to the serving bowl. Drizzle with flax seed oil, and toss

with the cashews. Serve warm.
