Indonesian Yellow Rice

1 cup uncooked regular long grain rice

14 ounces coconut milk

1/4 cup water

1/2 teaspoon salt

1/4 teaspoon ground turmeric

1 piece lemongrass -- about 2 inches long

 

6 servings

 

Coconut milk adds creaminess to this dish. Look for the unsweetened

product in the Oriental foods section of your supermarket.

 

Heat all ingredients to boiling in 2-quart saucepan, stirring once or

twice; reduce heat. Cover and simmer 14 minutes. (Do not lift cover or

stir.) Remove from heat. Fluff rice lightly with fork. Cover and let

steam 5 to 10 minutes. Remove lemongrass.

Saturated: 15 g, Cholesterol: 0 mg, Sodium: 190 mg, Protein: 4 g ,
