Oriental Daikon Salad

2 tablespoons white wine vinegar

1 tablespoon vegetable oil

1 tablespoon soy sauce

1 teaspoon grated gingerroot

1/2 teaspoon sesame oil

1/4 teaspoon salt

3 medium sliced diagonally daikon white radishes -- (2 cups)

1 cup sliced mushrooms -- (3 ounces)

1/4 cup sliced green onions -- (3 medium)

6 Bibb lettuce leaves

1 tablespoon sesame seed -- toasted

Looking for ways to use the new produce available in the supermarket? This

salad features daikon white radishes. Daikon, from the Japanese words dai

(large) and kon (root), is a large white Oriental radish with a sweet,

fresh flavor.

 

Shake vinegar, vegetable oil, soy sauce, gingerroot, sesame oil and salt in

tightly covered container. Pour over daikon, mushrooms and onions in large

bowl; toss until evenly coated. Cover and refrigerate about 2 hours or

until chilled. Serve on lettuce leaves. Sprinkle with sesame seed.
