Miller, RD Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 medium sweet potato 3 cups powdered sugar 1/2 teaspoon orange extract nonstick cooking spray 1/2 teaspoon butter flavoring 2 ounces paraffin wax 6 ounces Germen sweet chocolate -- (6 to 8 oz) Boil sweet potato in salted water until tender; chill in refrigerator overnight. Mash very fine. Add sugar, orange extract, and butter flavoring, making a dough stiff enough to work and shape with hands. Melt chocolate and wax over hot water. Spray hands with cooking spray. Roll dough into balls about the size of quarters, flatten with a fork if desired, and dip into chocolate. Or press dough into a pan and pour chocolate over the top. Store in a tightly covered container. T I P: If candies are slightly soft, chill before dipping.
