Sassy Summer Fruit Salad with Nut Butter Vinaigrette

Amount Measure Ingredient -- Preparation Method

2 tablespoons raw almond butter

1 teaspoon cider or wine vinegar

1 teaspoon honey or maple syrup

1/8 teaspoon dry mustard

pinch salt

apple juice -- as needed

SALAD:

3 cups assorted berries

(black, blue, raspberry)

or other seasonal fruit

fresh mint leaves

 

In a blender or food processor, put nut butter, vinegar, honey, mustard and

salt. Puree until well blended adding a little juice to thin.

 

Place the fruit in a glass serving bowl. Drizzle the sauce on top.

 

Serve at room temperature or chill briefly. Garnish with mint.
