Quinoa with Roasted Garlic and Pignoli Nuts

1 head garlic

1 cup quinoa -- washed

2 cups water

1 bay leaf

1/2 teaspoon basil

1/2 teaspoon salt

1/2 cup pine nuts (pignolia)

1 tablespoon unsalted butter

or extra virgin olive oil

1/4 teaspoon ground pepper -- or

1/8 teaspoon cayenne (instead of black pepper)

 

Preheat oven to 400F. Place garlic in a small baking pan and put in the oven.

Bake until the cloves are soft, about 25 to 30 minutes. The garlic can be cooked

the day before. Remove garlic from oven and allow to cool.

 

Meanwhile or later, put quinoa, water, bay leaf, basil and salt in a 2-quart

saucepan. Bring to a boil, covered. Reduce heat and simmer for 20 minutes.

 

Meanwhile, toast the pine nuts. (About 3 to 4 minutes in the 400F oven or in a

dry skillet over medium-high heat). Allow to cool.

 

Separate the cloves of garlic from their paper skins by squeezing each clove

gently. Add the garlic to the pine nuts with the butter or oil and pepper. Stir.

 

Fluff the quinoa with a fork and stir in the garlic nut mixture. Scoop into a

covered casserole and keep warm to serve warm.
