Coconut Orange Muffins with Walnuts

1 1/2 cups whole wheat pastry flour

1/2 cup unsweetened coconut meat

1 tablespoon baking powder

1 teaspoon cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/2 cup unsalted butter -- at room temperature

1 cup buttermilk

or plain yogurt with active cultures

1/2 cup real maple syrup or honey

1/4 cup blackstrap molasses -- unsulphured

1 egg

1 orange -- zest and juice

or 1 tsp orange extract

1 cup raw walnuts

 

Preheat the oven to 350F. Prepare a 12-cup muffin tin with paper inserts.

 

In a large bowl, combine the flour, coconut, baking powder, cinnamon, ginger and

salt.

 

In a blender or food processor, whip the butter until soft. Add the yogurt,

maple syrup, molasses and egg, mixing well. Mix in the orange zest and juice.

 

Pour the butter mixture into the flour mixture and using a fork, stir until

moistened.

 

Spoon the batter into muffin cups 3/4-full. Cover the tops with walnuts. Bake

until the tops are golden, about 15 to 20 minutes.

 

Transfer the muffins to a cooling rack.

 

 

[COMMENT - the recipe excludes baking soda. The other muffin recipes in the book

that use sour buttermilk or yogurt omit baking soda. Suggest trying the recipe

as written; if unhappy with the crumb (texture); then try again but add 1/2 tsp

baking soda to a recipe scaled to yield 12 muffins. kp-2001-01-14]
