Guest guest Posted January 15, 2002 Report Share Posted January 15, 2002 * Exported from MasterCook * Yummy Red Lentil Soup Recipe By :Arthritis Cure Cookbook by Adderly and De Angelis Serving Size : 6 Preparation Time :0:00 Categories : Soups And Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- peel; quarter 2 cloves garlic 1 tablespoon unsalted butter 1 teaspoon curry powder or garam masala 1 teaspoon ground coriander 2 ginger root slices -- do not chop 2 cups red lentils -- washed 4 cups vegetable broth or stock or water 3 tablespoons lemon juice 2 tablespoons extra virgin olive oil 1 teaspoon salt 1/8 teaspoon ground pepper -- several pinches 1/4 cup plain yogurt with active cultures (optional) Using a blender or food processor, pulse chop the onion and garlic. In a large soup pot on medium heat melt the butter and cook the onions until soft but not brown, about 5 minutes. Add the curry powder or garam masala, coriander and ginger. Cook gently for another 30 second, being careful not to burn the spices. Add the lentils and broth or stock and stir. Bring to a boil., covered. Lower heat and simmer, partially covered, until the lentils are tender, about 30 minutes, stirring occasionally. Add lemon juice, oil, salt and pepper and cook another minutes. Remove ginger and discard. Pour into individual bowls and serve with a dollop of yogurt if desired. TIPS - Red lentils will change from pumpkin red to yellow ochre when cooked. Substitute green or brown lentils or split peas; cook 45 and 60 minutes, respectively.
