Guest guest Posted January 15, 2002 Report Share Posted January 15, 2002 * Exported from MasterCook * Bok Choy With Cilantro Soy Sauce Recipe By : Betty Crocker Creative Ideas: Easy Chinese 2/95, p. 21 Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup tomato juice 2 cloves garlic -- finely chopped 1 teaspoon finely chopped gingerroot 4 cups chopped bok choy (stems and leaves) 1 cup chopped mushrooms -- (4 ounces) 1/4 cup chopped green onions -- (3 medium) 1 small yellow bell pepper -- chopped (1/2 cup) 2 tablespoons chopped fresh cilantro 2 tablespoons lime juice 1 teaspoon soy sauce 6 servings. Also called Chinese white cabbage or Chinese chard, bok choy is a mild vegetable with tender, long white stems and bright green leaves. Mix 1/2 cup of the tomato juice, the garlic and gingerroot in 10-inch skillet. Cook over medium heat 2 minutes. Stir in remaining tomato juice, the bok choy, mushrooms, onions and bell pepper. Cook 3 minutes, stirring occasionally, until bok choy leaves are wilted. Stir in remaining ingredients.
